3 Ingredient Peanut Butter Cookies

It’s finally Thursday! The weekend is literally just around the corner! But your energy is running a little low and you are starting to get tired. You’ve been working hard all week and you’re worried because you don’t know if you can make it through these next few hours to get to that beautiful thing we call the weekend. Well my friend I have something for you that will give you that little extra boost to get through. My easy and healthy recipe peanut butter cookies.


These cookies are easy to make, only require 3 ingredients , and only take about 15 minutes to whip up. Plus they are healthy! Who doesn’t love a healthy and delicious dessert? Crazy people, that’s who. I promise you that these little pieces of peanut butter heaven will get you through the hardest day of work or school. Or if you’re having a wonderful day, these cookies will just be the sprinkles on top of the sundae.


For this recipe you are only going to need three ingredients. The first ingredient is organic peanut butter. Make sure your peanut butter is made from only peanuts. Regular brand peanut butters add unnecessary oils, sugar, and salt which are all terrible for your well being. The next ingredient is organic coconut sugar. Coconut sugar is the healthiest of all the sugars (even healthier than organic cane sugar).  The reason is it effects the glycemic index less than any other sugar. Coconut sugar ranks about 35 on the index, while other sugars rank between 60 and 75. Foods that have a high glycemic index cause your blood sugar too spike (which can leads to the famous “sugar rush” then crash) . and the final ingredient is 1 simple egg.



You will need:

1 cup of creamy peanut butter

1/2 cup of coconut sugar

1 egg

Step 1: Pre heat oven to 350o

Step 2: In a medium sized bowl; combine peanut butter, coconut sugar, and the egg. Mix until they form a sticky dough

Step 3: Roll dough into 16 – 20 balls and place them on a baking sheet.

Step 4: Flatten balls with the palm of your hand and score with a fork

Step 5: Bake cookies for 8-12 minutes

Step 6: When cookie are done, let them cool and set before serving

Step 7: Enjoy your delicious and healthy peanut butter cookies!
